Gin Infused Gazpacho Soup

This is certainly a starter like no other. It’s the perfect addition to colder evenings with or without a Brockmans and Tonic.

This dish is the kind of thing you’ll want to share with all your guests, it’s perfectly balanced. Just like our gin.

 

Ingredients (Yield: 1.5 Liters):

 

  •  1 ½ Lbs. Tomatoes Peeled, Seeded & Chopped

  •  1 Cup Tomato Juice

  •  1 Cup Cucumber Peeled, Seeded & Chopped

  •  ½ Cup Chopped Red Pepper

  •  ½ Cup Chopped Red Onions

  •  1 Small Jalapeno Seeded & Chopped

  •  1 Medium Garlic Glove

  •  1 Lime Juiced

  •  ¼ Cup Olive Oil

  •  2 Teaspoons Balsamic Vinegar

  •  2 Teaspoons Worcestershire Sauce

  •  ½ Teaspoon Ground Cumin

  •  1 Teaspoon Kosher Salt

  •  ¼ Teaspoon Ground Black Pepper

  •  ¾ Cup Gin

 

Methods:

 

  • In a large mixing bowl, combine all ingredients accept the Gin.

  • Add the mixture to a blender, and puree for 15/20 seconds on high speed.

  • Add Gin and puree for another few seconds.
    Adjust Seasoning

  • Chili for few hours before serving.
